  2. Bloom the gelatin: In a saucepan over low heat, add ginger beer + lime juice. Sprinkle in all gelatin packets and let sit for 1–2 minutes to bloom, then whisk until smooth.

  3. Finish the mix (don’t boil): Whisk in the vodka and minced mint. Warm gently until the mixture is steaming and fully dissolved (a light simmer is okay), then remove from heat. Let cool 5–10 minutes so it’s not piping hot.
